Roast of the week · No. 41

La Estrella, Huila.

Every Tuesday we roast one coffee we can’t stop talking about. It goes on the pour-over bar, into the batch brewer on Thursday, and onto the shelf in 250 g bags until it runs out. The next one drops on Tuesday.

Whole bean, 250 g

Roasted Tuesday, rested four days, at its best from the weekend for three more weeks. Ground for your brewer if you ask.

$19 per bag · two loyalty stamps

In the cup

  • Blood orange
  • Panela
  • Cocoa nib

Juicy and round, with a clean, sweet finish that lingers like brown sugar. Lovely black on filter; as espresso it turns into a chocolate orange.

Our story

A kiln works, still warm.

Ember started in 2016 on a one-kilo roaster in a garage, selling bags off a folding table at the Saturday market. When the old Brindle Yard kiln works came up for rent, we couldn’t resist the name, or the chimney.

Today Marguerite, our 15-kilo roaster, runs every Tuesday behind the glass at the back of the café. You can watch, ask questions, and taste the first pour at four. We buy from four grower groups we visit, pay well above the commodity price, and print what we paid on every bag.

“Good coffee should be quick to get and slow to forget. That’s the whole plan.”

Ines Arroyo, head roaster

Good questions

Before you pop in.

Can’t see yours? Ask at the bar or call (555) 018-4420. We pick up between orders.

How long do you hold an order-ahead pickup?

We start your drink a few minutes before the time you choose, so it’s hot when you arrive. If you’re running late we keep it on the shelf for 20 minutes, then remake it fresh when you get here, free.

Do I need an account or an app to order ahead?

No. Just a name for the cup. Add your mobile if you’d like the stamps to go on your loyalty card, and we’ll text you once when it’s on the shelf.

How does the loyalty card work?

One stamp per drink, two per bag of beans, double stamps on Tuesdays. The tenth stamp is a free drink of any size, any kind, including a pour-over of the roast of the week. Stamps never expire.

Can you grind beans for my brewer?

Of course. Tell us what you brew with (espresso, cone, French press, stovetop, cold brew) and we’ll grind it to suit. Whole bean keeps longer, so we grind on the day you pick up.

Which milks do you have, and do they cost extra?

Whole, skim, oat and soy, all at the same price. Our ganache, chai and syrups are plant-based, so any milk drink is vegan with oat or soy.

What about allergies?

Our kitchen handles nuts, gluten, dairy, egg and sesame. Items marked GF are made without gluten, but not in a separate kitchen. Ask us and we’ll show you every label.

Can I watch the roast?

Every Tuesday from 9 am the roaster runs behind the glass at the back of the café. At 4 pm we pour the first cups of the new roast for anyone holding a card.

Do you supply offices and cafés?

We roast for a handful of neighbourhood spots and a few offices, with fresh bags every week and someone to fix the grinder when it sulks. Call us and ask for Ines.
